A salad created in the late 19th century, at the Waldorf-Astoria Hotel in New York City.

Ingredients

  • 1 pinch kosher salt, or to taste
  • 1 pinch pepper, or to taste
  • 1 Tbs olive oil
  • 4 boneless, skinless chicken breasts
  • 4 ribs celery, diced
  • 1 apple, diced
  • 1 cup grapes, diced
  • 1 lemon, juiced
  • 1/4 cup chopped walnuts
  • 1 Tbs chopped fresh thyme (optional)
  • 1/2 cup mayonnaise (or plain Greek yogurt), up to 3/4 cup

Directions

  • Salt and pepper chicken. Preheat skillet.
  • Drizzle with olive oil. Brown chicken on each side and cook until done.
  • Combine celery, apple, grapes, lemon, walnuts, thyme, salt, and pepper in a bowl.
  • Let chicken cool and chop. Add to salad bowl. Add desired amount of mayonnaise.
  • Refrigerate until ready to serve.
