Fresh fruit and cream cheese sandwiched between French toast.

Ingredients

  • 1 1/2 cups mixed sliced fruit
  • 6 Tbs cream cheese, softened (or Nutella)
  • 1 Tbs olive oil
  • 4 eggs
  • 1/2 cup whole milk (or half and half, or cream)
  • 1 Tbs honey
  • 12 slices day-old bread of your choice

Directions

  • Add fruit with a smear of softened cream cheese between two slices of bread.
  • Preheat skillet. Add enough olive oil to coat. Whisk together all ingredients. Dip sandwiches and coat completely in mixture.
  • Cook on each side until golden brown. Cook on medium to medium-low heat. Be careful not to burn. Try not to flip the toast more than once.
  • Serve immediately.
