Spinach, Egg, and Herb Gratin
Ingredients
- 4 lbs fresh spinach
- 2 onions, peeled and chopped
- 1 Tbs vegetable oil
- 11 Tbs butter, divided
- 2 cups whole milk
- 1 bay leaf
- 6 Tbs flour
- 4 egg yolks
- Nutmeg, to taste
- Salt, to taste
- Ground black pepper, to taste
- 4 egg whites, stiffly beaten
- 8 Tbs grated cheese (Parmesan or Romano)
Directions
- Cook spinach and drain well.
- In saucepan, warm vegetable oil and 3 Tbs of the butter.
- Saut onions until soft and add spinach to get rid of water. Remove from heat and set aside.
- Preheat oven to 375F.
- Pour milk into another saucepan and add bay leaf. Warm over low heat.
- In another heavy-bottomed saucepan, add the other 8 Tbs of butter and the flour. Heat this mixture while stirring and then stir in the warmed milk.
- Once thickened, add egg yolks while stirring quickly. Add spinach and onions.
- Season with salt, pepper, and nutmeg.
- Fold in egg whites and pour into buttered ovenproof dish.
- Scatter cheese on top and bake for 30 minutes.
