Smoked Chicken Salad with Onions and Dried Cherries
Ingredients
- 4 1/2 cups diced, cooked, smoked chicken (or turkey)
- 1 1/2 cups diced celery
- 2 1/4 cups diced sweet onions
- 2 1/4 cups chopped, dried tart cherries
- 1 cup minced, fresh basil
- 2 cups mayonnaise
- 3/4 tsp salt
- 3/4 tsp ground black pepper
- 1 tsp orange zest
- 3 Tbs fresh orange juice
Directions
- Place all ingredients in mixing bowl, stir gently until well combined.
- Refrigerate until ready to prepare sandwiches.
