Ingredients

  • 4 artichoke hearts, cleaned
  • 3 Tbs lemon juice
  • 2 Tbs extra-virgin olive oil
  • 1 tsp fresh thyme or 1/2 teaspoon dried
  • 1-2 cloves garlic, pressed
  • 1 bay leaf
  • sea salt

Directions

  • Preheat the oven to 350F.
  • Slice the artichoke hearts into 1/4" pieces. Toss with the lemon juice, olive oil, thyme, garlic, bay leaf, and a pinch of sea salt.
  • Spread in a casserole dish or roasting pan. Bake for 20 to 25 minutes until golden brown. Let cool 15 minutes before using.
