Ingredients

  • 1 cup wheat berries, cooked
  • 1 small head radicchio, sliced into bite-sized pieces
  • 2 handfuls baby spinach
  • 1 apple, sliced
  • 1/4 cup pecans
  • 1/3 cup blue cheese
  • 2 Tbs herby olive oil (or olive oil and chopped rosemary combined)
  • 1 pinch kosher salt
  • 2 Tbs maple syrup

Directions

  • Toss cooked wheat berries in a bowl with spinach, apple, pecans, blue cheese, olive oil, salt, and maple syrup.
  • Meanwhile, heat a pot to medium high and add radicchio; cook until brown.
  • Toss together.
