Radicchio and Wheat Berry Salad
Ingredients
- 1 cup wheat berries, cooked
- 1 small head radicchio, sliced into bite-sized pieces
- 2 handfuls baby spinach
- 1 apple, sliced
- 1/4 cup pecans
- 1/3 cup blue cheese
- 2 Tbs herby olive oil (or olive oil and chopped rosemary combined)
- 1 pinch kosher salt
- 2 Tbs maple syrup
Directions
- Toss cooked wheat berries in a bowl with spinach, apple, pecans, blue cheese, olive oil, salt, and maple syrup.
- Meanwhile, heat a pot to medium high and add radicchio; cook until brown.
- Toss together.
