Peach Salsa
Ingredients
- 3 firm and ripe peaches, diced (with or without skin)
- 1/4 red onion, chopped
- 3 Tbs mint leaves
- 1 tsp grated fresh ginger
- 1 pinch kosher salt
- 1/2 lemon, juiced
- 1 jalapeo, diced and seeded (optional)
Directions
- Combine all ingredients in a large bowl and refrigerate until ready to serve.
- Salsa is best when it is left to refrigerate a few hours before serving.
