Peach Oatmeal Muffins
Ingredients
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1/3 cup applesauce
- 2 Tbs vegetable oil
- 2 eggs
- 3/4 cup whole milk
- 2 tsp vanilla
- 1 1/3 cups flour (white, wheat, or any combination of the two)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1 cup oats (old-fashioned or quick-cooking)
- 1 large peach, diced
Directions
- Combine the first seven ingredients in a large mixing bowl and beat/mix until well combined.
- Combine remaining ingredients, except peaches, in a separate bowl and whisk for 1 minute.
- Slowly add to wet ingredients and stir just until combined. Fold in peaches.
- Pour batter into greased muffin tins and bake at 400F for 15 to 20 minutes.
