Orange Mango Chicken
Ingredients
- 1 broiler-fryer chicken, cut up, skin removed
- 1 cup R.W. Knudsen Family Orange Mango Juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp grated orange peel
- 1 tsp salt
- 1/2 tsp thyme leaves
- 1/2 tsp rosemary
- 1/2 tsp pepper
- 2 Tbs vinegar
- 1 Tbs honey
- 2 tsp Worcestershire sauce
Directions
- To prepare marinade, mix in a bowl R.W. Knudsen Orange Mango Juice with all other ingredients except the chicken.
- Place chicken in close fitting bowl or pan.
- Poor marinade over chicken.
- Cover and refrigerate for one hour, turning chicken several times.
- Lift chicken from marinade and drain briefly.
- Arrange chicken on a lightly greased grill four to six inches above a solid bed of medium coals.
- Cook for 35 to 45 minutes, turning and basting frequently with marinade, until meat near the bone is no longer pink.
