A light and eggy Spanish custard.

Ingredients

  • 4 cups whole milk, divided
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 4 eggs, separated
  • 1/4 cup flour
  • 1 1/2 tsp freshly grated nutmeg

Directions

  • Place heavy saucepan over medium-low heat.
  • Add 1 cup milk, sugar, and salt, and scald.
  • In a bowl, combine the egg yolks, flour, and scalded milk mixture.
  • Pour rest of milk into saucepan and add scalded milk mixture. Cook until it thickens into a soft custard.
  • Beat egg whites until stiff and fold into custard.
  • Spoon custard into bowls; top with nutmeg and refrigerate until ready to serve.
