Ingredients

  • 1/3 cup lime juice, freshly squeezed
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper, freshly ground
  • 4 cloves garlic, finely chopped
  • 1 large bunch fresh mint leaves, finely chopped
  • 12 ounces lamb shoulder or leg, cut into 1 1/2-inch cubes
  • Kosher salt, to taste

Directions

  • Mix lime juice, olive oil, kosher salt, pepper, garlic, and mint together in a food processor or blender; blend.
  • Marinate lamb in mixture for 20 to 40 minutes.
  • Remove lamb from the marinade, and allow excess to drain off.
  • Sear lamb in a very hot pan.
  • Stir and cook until medium-rare to medium, about 6 to 7 minutes.
  • Season with additional kosher salt.
