Marinated Grilled Lamb Pintxos
Ingredients
- 1/3 cup lime juice, freshly squeezed
- 1/2 cup extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp pepper, freshly ground
- 4 cloves garlic, finely chopped
- 1 large bunch fresh mint leaves, finely chopped
- 12 ounces lamb shoulder or leg, cut into 1 1/2-inch cubes
- Kosher salt, to taste
Directions
- Mix lime juice, olive oil, kosher salt, pepper, garlic, and mint together in a food processor or blender; blend.
- Marinate lamb in mixture for 20 to 40 minutes.
- Remove lamb from the marinade, and allow excess to drain off.
- Sear lamb in a very hot pan.
- Stir and cook until medium-rare to medium, about 6 to 7 minutes.
- Season with additional kosher salt.
