Frozen vegetables are perfect for fall or winter before summer vegetables are in season.

Ingredients

  • 2 Tbs olive oil
  • 2 Tbs butter (or margarine)
  • 2 cloves garlic, minced
  • 1/2 10 oz bag frozen Italian vegetable blend, thawed
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes
  • 2 1/2 cups cooked brown rice

Directions

  • Heat olive oil and butter (or margarine) in a large skillet until butter is melted.
  • Add garlic, vegetables, and seasonings. Cook for 5 minutes.
  • Stir cooked brown rice into the skillet until combined and heated through.
