Frying potatoes in a combo of vegetable oil and bacon drippings adds extra flavor.

Ingredients

  • Vegetable oil for frying
  • 1/2 cup bacon drippings (more if needed)
  • 4 russet potatoes (one per person)
  • 1 pinch salt, or to taste

Directions

  • Fill frying pan with about 2 inches of vegetable oil. Add bacon drippings and use more if you have it. Preheat oil to 350F.
  • Scrub potatoes clean and cut into very small fries. Each should be about 1/3 inch thick.
  • Fry the potatoes until golden brown. Drain on a kitchen towel or paper towel and add salt while warm.
