Herb Roasted Green Beans and Tomatoes
Ingredients
- 2 lbs fresh green beans
- 1 lb cherry tomatoes
- 2 Tbs olive oil
- 1 tsp kosher salt
- 1 tsp dried Italian herb mix
Directions
- Preheat oven to 400F. Wash green beans and snap off ends. Wash tomatoes.
- Place green beans in a baking dish and drizzle with olive oil; sprinkle with kosher salt and dried herbs.
- Roast at 400F until tender but still bright green, about 1520 minutes, depending on size.
- Place the tomatoes in a baking dish and drizzle with olive and sprinkle with kosher salt and dried herbs.
- Roast them for about 10 minutes, or just until they start to burst. Serve warm.
