Grilled Spiced Apple Jamaican Jerk Chicken
Ingredients
- 3 lbs chicken breasts, thighs and drumsticks
- 1 Tbs fresh chopped ginger
- 4 garlic cloves, chopped
- 1 medium red onion, chopped
- 1-3 habaneros or jalapenos stemmed and seeded (use gloves)
- 2 Tbs soy sauce
- 3 Tbs olive oil
- 1 Tbs salt
- 2 tsp ground black pepper
- 3/4 tsp ground nutmeg
- 2 cups R.W. Knudsen Cider and Spice
Directions
- Blend all ingredients in a blender until smooth.
- Put chicken into a couple of large zip lock bags and divide marinade between them. Refrigerate overnight.
- Preheat gas grill to medium heat.
- Remove chicken from marinade.
- Grill until chicken is cooked through and well browned on all sides, 20-30 minutes.
