Greek Quinoa Salad
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup chopped seedless cucumber
- 1/2 cup cherry tomatoes
- 1/2 cup chopped red bell peppers
- 1/2 cup chopped green bell peppers
- 2 Tbs chopped fresh parsley
- 1 Tbs chopped fresh mint
- 1 lemon, juiced
- 2 Tbs olive oil
- 1/4 tsp cumin
- 1/2 tsp kosher salt
- 1/4 cup unsalted sunflower seeds (optional)
Directions
- Cook quinoa according to package directions in water.
- Add all other ingredients to a large bowl.
- When quinoa is cooked, add to bowl and stir to combine.
- Let sit for about 15 minutes before serving so that the flavors can combine.
