Fresh Figs with Ice Cream and Amaretto Chocolate Sauce
Ingredients
- 1 pint vanilla ice cream, softened
- 2 Tbs grated semisweet chocolate
- 10 amaretti cookies, crumbled
- 1/4 cup chopped and toasted whole almonds
- 2 tsp melted butter
- 4 tsp honey
- 2 tsp amaretto liqueur (or 1/2 tsp almond extract)
- 4 large fresh California figs, halved
- Amaretto Chocolate Sauce5 Tbs sugar
- 5 Tbs water
- 2 squares unsweetened chocolate
- 2 squares semisweet chocolate
- 2 tsp butter
- 2 tsp amaretto liqueur (or 1/2 tsp almond extract)
Directions
- Pack 1/2 cup vanilla ice cream into each of four small paper cups and re-freeze.
- In small bowl, mix grated chocolate, crumbled amaretti cookies, chopped almonds, butter, honey, and liqueur.
- Divide mixture into 2 tablespoon portions and place on cut side of each fig half.
- Amaretto Chocolate SauceMeanwhile, combine sugar, water, chocolate, and butter in heavy 1-quart saucepan.
- Heat on medium, stirring until mixture boils, thickens and is smooth, about 2 minutes. Remove from heat; stir in liqueur.
- To serve, un-mold ice cream and arrange on four individual serving plates. Arrange figs around and drizzle sauce over all. Serve warm.
