Summer's bounty in a bowl—beans, tomatoes, and corn all mingle with a simple vinaigrette.

Ingredients

  • 1 1.25 oz package taco seasoning mix
  • 1/4 cup water
  • 2 Tbs canola or olive oil
  • 1/4 cup vinegar
  • 1 15 to 16 oz can pinto beans, drained and rinsed
  • 1 14 to 16 oz can whole-kernel corn, drained
  • 2 tomatoes, peeled and diced
  • 1/4 cup red, yellow, or green pepper, diced
  • 4 green onions, cleaned and finely chopped

Directions

  • Mix taco seasoning, water, oil, and vinegar together in a bowl.
  • Add vegetables and stir.
  • Cover and chill several hours or overnight.
