Chocolate Cobbler
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 3 Tbs cocoa powder
- 1/2 tsp kosher salt
- 3/4 cup sugar
- 2 Tbs olive oil (or vegetable oil)
- 1 cup whole milk
- 1 tsp vanilla
- 1 cup roasted nuts (optional)
- Cooking spray, as needed
- Topping1/4 cup cocoa powder
- 3/4 cup brown sugar
- 1 3/4 cup hot water
Directions
- Preheat oven to 350F.
- Sift together flour, baking powder, cocoa, and salt in a large mixing bowl.
- Add sugar and mix. Add oil, milk, and vanilla. Mix until well incorporated, but do not over-mix. Add roasted nuts if using.
- Spray 8 x 8-inch baking pan with non-stick cooking spray. Pour mixture into baking pan.
- Add topping ingredients, just sugar and cocoa to a mixing bowl, and mix well. Sprinkle on top of batter.
- Take hot water from tap, and slowly pour it on top of everything. Make sure that all of the topping is wet.
- Bake for 45 minutes.
