Buffalo Chicken Sandwich
Ingredients
- 4 boneless, skinless chicken breasts
- 1 pinch kosher salt
- 1 pinch pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 2 Tbs olive oil
- 1/4 cup water
- 1/4 cup Tabasco sauce
- 3 Tbs butter
- 4 leaves lettuce
- 4 slices tomato
- 4 slices onion
- 4 hamburger buns
- Blue Cheese Dressing1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup crumbled blue cheese
- 1 clove garlic, grated
- 1/4 tsp white pepper
- 1 pinch kosher salt
- Ranch Dressing1/2 cup reduced-fat buttermilk
- 1/4 cup mayonnaise
- 1 clove garlic, grated
- 2 Tbs grated onion
- 1/2 tsp lemon juice
- 1 tsp fresh, chopped chives
- 1 tsp fresh, chopped parsley
- 1 pinch kosher salt
- 1 pinch pepper
Directions
- Preheat skillet. Pound the chicken breasts with a cast iron skillet until they are 1 inch thick.
- Salt and pepper chicken. Sprinkle each breast with paprika and cayenne pepper. Drizzle pan with olive oil. Brown chicken on each side and remove from skillet.
- De-glaze pan with water. Add Tabasco sauce and butter to pan (or replace this with wing sauce). Add chicken back to pan and simmer for about 5 to 10 minutes until sauce has thickened.
- Combine ingredients for blue cheese in one bowl and mix well.
- Combine ingredients for ranch in another bowl and mix well.
- Serve warm buns topped with chicken breasts and sliced vegetables. Serve alongside blue cheese and ranch.
