Ingredients

  • 3 cups cooked brown rice
  • cup chopped cucumber
  • cup chopped tomato
  • cup chopped fresh parsley
  • cup chopped fresh mint leaves
  • cup sliced green onions
  • cup olive oil
  • cup lemon juice
  • tsp salt
  • tsp freshly ground black pepper

Directions

  • Combine rice, cucumber, tomato, parsley, mint, green onions, olive oil, lemon juice, salt and pepper in large bowl. Toss well and chill.
