Banana Coconut Bread with Stevia
Ingredients
- 3 large mashed bananas
- 1/2 cup coconut milk
- 2 eggs
- 2 tsp vanilla extract
- 1 cup stevia (or sugar)
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup shredded coconut
- 1/4 tsp salt
Directions
- Preheat oven to 350F. Spray a loaf pan with non-stick spray or grease lightly.
- Mash bananas in a large bowl. Add coconut milk and eggs. Whisk well to combine. Add vanilla extract and combine.
- In a separate bowl, sift together stevia, flour, baking powder, baking soda, shredded coconut, and salt. Add to mixing bowl with banana mixture. Whisk together until just combined.
- Pour batter into loaf pan and bake for 50 to 60 minutes or until bread is brown and toothpick comes out clean.
