Spanish Saffron is possibly the world's most expensive spice. It's highly valued for the delicate flavor and rich golden color it adds to recipes. It is the key spice in such ethnic dishes as Spanish Paella, French Bouillbaise and Latin Arroz Con Pollo.

Spanish Saffron is such a valuable culinary spice because of the unique, labor-intensive cultivation and harvesting methods involved with obtaining it. It is the stigma of a small purple crocus flower, which blooms for a limited time once a year. It's said to take well over 10,000 stigmas to make just one ounce of Saffron! The stigma must then be hand picked before it is ready for use.
