The pungent, biting flavor of ground Black Mustard seeds is generally combined with the milder Yellow Mustard to make an intense yet complex condiment, ideal for meats, sauces, curries, and dressings.
The aromatic heat of Mustard powder is released only when mixed with water and made into a paste. However, it's imperative that you prepare it at least 20 minutes before you're ready to use (this allows time for the full flavor to develop). To preserve the flavor, add vinegar, wine or lemon juice.
